Hi Jay,

Missed the earlier reply - for some reason my server decided not to post it.

Yes you shell the hard boiled eggs - I would guess they would last a good
six months but they initially go in for a couple of months to pick up the
flavour and then get eaten fairly quickly.

I tried just herbs but that wasn't so successful - the vinegar pretty much
hides/conflicts with the flavour - did think of doing it with olive oil and
herbs but not followed through on that one.

The indian spices work in a lovely way - stick in a few fresh chillies makes
it look nice and gives a kick. Yummy. Spices aren't to everyone's taste,
but it works for me. Bit of a summer thing though - go off them in winter
unless chucking them into a warming curry which works very very well.

Also tried the chinese 100 year (or is it a 1000) egg. What I got was quite
authentic but bloody disgusting to my taste! Saw a doc once where some
Brits were given these to eat and almost threw up and some Chinese were
given Stilton and they had the same response. Horses for courses and all
that.
