I also have had a hard time in the past hard boiling fresh eggs, so used
to leave them out at room temp. for 4 or 5 days to "age" them faster.
That worked ok, but...
we had a similar discussion on one of the cooking lists awhile back and
someone made the suggestion to steam them instead of boiling them.
I tried it.
It worked. ;-)
I can now peel fresh eggs!
As soon as the water under the eggs starts to boil, (I use a screen
strainer over a stock pot with a couple of inches of water in it), I
time it for 20 minutes. I then turn it off and allow them to rest for
another 10 minutes, then plunge them into cold water, and keep the water
cold for about 1/2 hour after cracking them all over with the back of a
spoon.
They peel like a dream!
