culling poultry if birdflu comes

Hello poultry people,
maybe that subject should read 'when' birdflu comes. I only have half a
dozen chickens and three muscovy ducks; but with anxious neighbours all
around, I'm committed to culling them in anticipation, if the disease
reaches the UK.
Rather than destroy them for nothing, I'd like to freeze and eat them. (They
are presently healthy, after all).
I have no resources/experience/tools for this kind of thing.
Any advice from the group?
