Catching chickens

Spent far too long this weekend catching a couple of our surplus
Indian Game cockerels to despatch them and get them in the
fridge/freezer.
Our birds are all free range and see me a few times a day for
feeding and collecting eggs, but are far from hand-tame. Even
when I'm feeding them some are too wary to come any closer than
a few metres. The Indian Games are pretty fast on their feet, too,
once they've decided they're going to run.
What are good ways to catch chickens that are really not interested
in being caught?
