Hmmm. I had always heard squirrel disparaged as a table meat.

A crockpot. Squirrel, dab of water. A dab of good season's powdered italian
dressing and heaven awaits. Wait about 4 hours, until it falls off the
bone. YUM!!!
Anyway,
the point is moot for me since the DH would never countenance the
hunting and eating of squirrel and all non-fowl meat seems to disagree
with me these days anyway.
Squirrel tastes like chicken, with no fat. It's the other white meat
It actually reminds me more of squab in texture, but I don't cook them
like you do. :-) Mom generally pressure cooked and stewed them.
I've been doing sort of a slow fry in olive oil on medium heat in cast
iron. The meat is surprisingly tender cooked only for about 15 minutes
per side. I cut them into quarters with poultry shears and season them
with a bit of lemon pepper.
Most of the squirrels I get are young tho'.
Bob told me to wet them down well with water to prevent hair shedding on
the meat. It works like a charm!
