The butcher DID advice me on how to handle the bird. I was simply
trying to confirm his answer. After all I did not want to poisen my
entire family on Thanksgiving.

Considering this is an international group of strangers who were given very
little information about the circumstances and who gave you good
straightforward information based on that paucity of data its not surprising
that this was sparse.

BTW, I have never heard of hanging any poultry product before, that
must be a UK practice.

Try doing a little more research -- there are plenty of references in the
archives of this group and many other US back yarding and foodie groups and
forums where many who have had the birds to deal with have learnt about the
benefits.
It is a practise worldwide
