Prior to this event I never dealt with this butcher. In America,
unfortunately the local butcher is a rare luxury. It amazes me how or
why it gets decided by American society which professions are
eliminated without cause. Years ago the local butcher was valued in
society and they were usually well compensated too.
This, unfortunately, is not a uniquely USian trait.
In the drive for what is percieved to be safer food and closer regulation
small local slaughterhouses and their associated butchers have been lost all
over.
I would venture to suggest you have more liberal rules and therefore greater
access to "locally" produced food in much of the US than much of Europe.
