You must live in an urban area. Try finding one in a smaller city or rural
area. There are no true butcher shops anywhere near me (And they were hard
to find in the metro Atlanta area). There were none in the small city where
I lived the past 6 years before this. There are places that sell meats but
they are FAR from local butchers. The meat typically comes precut and
prepackaged and the grocery stores that still employ a guy cutting for them
is still working with large chain suppliers.

Prior to this event I never dealt with this butcher. In America,
unfortunately the local butcher is a rare luxury. It amazes me how or
why it gets decided by American society which professions are
eliminated without cause. Years ago the local butcher was valued in
society and they were usually well compensated too.
