We do have plenty of abattoirs down here, but they specialize mostly in
processing of large game (deer, feral hogs). None will handle poultry and
if you want them to deal with regular pork and beef, you have to provide
the live hog or steer. Not a bad deal if you have the animals or are
willing to stock up and freeze an entire carcass-worth of cuts, or find a
group to split the meat with, but it's not practical or something the
average consumer is going to be willing, much less able to do.
I actually plan on getting a small breeding flock of goats and sheep in
the next few years for using this way, but cattle are out of my abilities
and willingness to work with, and the amount of meat and up-front expense
is more than I can handle. It's actually cheaper than buying your steaks
at the grocery store, but imagine buying a few hundred pounds of beef at
once, even at a serious discount.
I buy half a beast at a time but whole sheep and pigs and the only goats
I've bought were whole. The price per pound works out very cheaply and I get
prime meat.
