Jamie Oliver pickles them.
If you add them to other dishes early in the cooking process, it makes the whole dish taste creamy - I did it with a chicken dish once.
A Bolivian man once made eggplant for me, too.... he cut slits in it, from tip to base so it was like castanets, and then put slices of cheese in the slits, and roasted it. With a dash of garlic, it's delicious.
