Sheung has tone #6 (in the Cantonese tone system) and shui has tone
#2. Or in IPA: [22] and [35], respectively.
For "rising", that's tone #5 [13].
Mandarin has lost this distinction between "to go up" and "above",
both being Shang4. The only exception is the tone name Shang3sheng1,
which has kept the original tone of Shang3, which means "to go up".
