I got some information about that in the french science magazine
"Science et Vie". The joints get their final look only months after the
stones are mold, when the blocks shrink upon drying.

So remarkably the blocks shrink along neat lines that are so flat that
Petrie remarked on the fact in his definitive survey of the Great Pyramid?
Yet this shrinkage is so small that while the blocks crack and split, you
still can't get a ticket between them. Odd that these shrinkage forces
didn't result in some of the blocks cracking apart in jagged lines.
