That's the problem, I think. With the Mars rover panoramic images, the
color designations are in the file name (L2,L3,and L4 are red, L5 is green,
and L6 and L7 are blue). There doesn't appear to be any with the released
cassini images.
As for combining them in photoshop, for instance with the rover images, you
open the L2 image, create a layer, then open each other one and create
layers for each. Then you drag the created layer for each one to the L2
image, and set them as overlays (including the L2 layer you created. Then
you will have your composite color image.
