Yes. They will behave as if their focal lengths are 1.6 times longer. If
you try using the 400mm with a focal extender you may have problems with
autofocus- it depends on the specific DSLR and lens.
2. Do the digital SLRs have a mirror that "slaps" up when the shutter is
released, or, are they silent (like old focal plane cameras such as the
Leica M1, M2, M3, etc.)
Yes, although the mirror slap is pretty gentle. But if you are
astroimaging, you should configure the camera to put the mirror up a few
seconds before opening the shutter- something the Canon DSLRs are
capable of.
One other thing... your Canon flashes will probably not work very well
with the DSLRs. The digital cameras handle the through-the-lens flash
metering very differently from the film cameras. As a result, the older
flash units usually behave like much more basic devices.
