Ah, you must be referring to:
Nature and Nature's laws lay hid in night;
God said, "Let Newton be!" and all was light
by Alexander Pope
who took a wrong turn and started referencing daily and orbital
motions to an equidistant celestial sphere dome, modern imaging is just
too dynamic and too productive to leave to late 17th century
astrological conveniences.
Yes, it is indeed part of the false geocentric view to imagine that
the stars simply are attached to, or painted on, a spherical
firmament. The stars and galaxies are at various distances from the
Earth.
But that doesn't change the fact that they are very far away, so that
the directions to these distant objects are very much the same from
the Earth and the Sun, and do not change noticeably over the course of
years. So using them as a reference for directions doesn't imply their
true nature is being forgotten, and your alternative of considering
only the Earth and Sun, at least the way you present it, eliminates
the Earth's motions around the central Sun, and abandons Copernicus in
favor of Brahe. That is not right.
