Two categories come immediately to mind:
1) Supernovae. SN 1987A in the Large Magellanic Cloud was the last one
to achieve naked-eye brightness; before that, Kepler's Star of 1604,
Tycho's Star of 1572, and the SN in 1054 which produced the Crab Nebula
(and which may have inspired the star-and-crescent motifs of the Near
East). S Andromedae (a supernova in M31 in 1885) did reach magnitude 6,
making it just barely visible to the unaided eye.
2) Some comets split apart or completely disappear after they pass too
close to the Sun. Biela's Comet in the 19th century is an example.
