What's wrong with polycentrism in science? I am a physicist. We
have long ago accepted Newtonian physics, which is a polycentric
theory.
Newton's theory of gravity was preceded by Kepler's Laws. Now
there was a monocentric theory (the sun being the center). However,
physicists now see Kepler's Laws as a special case of Newton's Laws.
Furthermore, there is even an analog in physics to your
complaints about "channelization." Yep, materials really don't always
behave as separate "point" particles. Physical systems aren't
completely channelized. However, we have continuum mechanics.
Continuum mechanics shows that the Newton's Laws are self consistent
even when the system isn't completely channelized.
I think the same is true for "gene centric" biology. It works to a
very large extent over a wide range of conditions. It breaks down and
new stuff is coming up. But it works for most of your examples.
