Measuring freezer temperature

Hello,
I've read in a couple different places that to accurately measure the
temperature of a freezer you should place the thermometer into a cup of
cooking oil and let it sit a few hours. Assuming the freezer door is
kept shut between placing the thermometer inside open on a shelf and
checking it several hours later, would the air temperature really
differ from the middle of a cup of oil?
If this isn't an urban legend, could anyone explain the thermodynamics?
