It is not clear for what purpose the poster would like to remove
alcohol from wine. If the purpose is to make low-alcohol spirits to
serve as a beverage, then I'd agree with you- don't bother trying to
make them at home. But if the purpose is to determine how much alcohol
is left over in a recipe after cooking (some pregnant women and their
spouses are absolutely obsessive about removing alcohol from the diet)
then heating the wine (along with other ingredients) is a necessary
step.
You are correct that monitoring the vapor temperature is necessary for
a careful distillation. But as far as determing when all the alcohol
is removed from the liquid, a heating point curve of the slowly heated
liquid should give the same information, and is certainly more
practical for someone who is cooking at home, in an open pot, without
the benefit of an enclosed distillation column.
