The most simple fashion is just to heat the wine in an open pot and when the
wine begins to simmer light the alcohol fumes at the top of the pot. This
will burn the alcohol off. If there is a french restaurant near ask the
cook to show you how or find a french cooking teacher.
Alcohol meters such as "Alcoholmeter Gay Lussac & Cartier" can be found at
stores that sell distillation equipment.
