Re: removing ethanol from wine



There are bacteria that can catalyze the ethanol to acetic acid. (See
http://en.wikipedia.org/wiki/Acetic_acid_bacteria ) Then one could easily
neutralize the acetic acid with an appropriate base. Of course the
bacteria could really mess up the taste and generate other unwanted stuff.
