Enzyme Kinetics

Hi every one
In Michaelis-Menton kinetics for enzyme, it is assumed that [S]total
>>[E]total, and it is further assumed that we are only analysing the initial velocity.
If the substrate concentration is very high than the enzyme
concentration, would not all the enzymes be saturated? and would not
the rate of reaction be maximum?
Would be thankful if you can clear my confusions.
