Re: Soluble Starch?



According to Merck Index, "soluble starch" is made by a mild treatment
of starch with hydrochloric acid. The idea is to reduce the size
enough to enhance solubility, but leave it still large enough that it
can't be metabolized without use of starch-degrading enzymes.

Chemically how is the acid hydrolyzing the starch?
