Dear Dan S.:No, but I want to maintain the highest concentration while adequately infusing or "steeping" the spices that put in.

temperature does the alcohol evaporate (or boil out)
of the heated wine?
Continuously. Water and ethyl alcohol form an azeotrope (look it up on Wikipedia).
Certainly simply avoiding boiling the mixture
doesn't salvage the greatest amount of alcohol.
"Salvage"? Are you trying to concentrate the alcohol?
Certainly the alcohol will evaporate or boil
out sooner? Am I incorrect?
Read "azeotrope".
