4. adjust pH to 5,5-9,5 (20% HCl)
My first question is: why do we increase pH to 14 and
heat the system up ?
I would guess 1.) "saponification" and / or "denaturing proteins" and
2.) "sterilization" and / or "increasing reaction rate" respectively.
I will be interested in what someone with experience will say.
