Carotenoids are normally not very water soluble,
but they most certainly have some solubility.
When I've made flavored vinegars from chili peppers,
the vinegar becomes strongly colored. I haven't
tried extracting the color into an oil layer,
but I expect it would extract to some significant
degree.
Lutein is the red color in bell and chili peppers,
and beta-carotene is the orange color.
It might be worth combining this demonstration
with a demonstration of paper chromatography.
