Years ago, I built a colorimeter for about $5 plus the cost of a cheap
voltmeter. You can measure colors, not just presence/absence, but
quantitatively.

The components are:
light-tight box - cut and drilled from a block of wood (I used
mahogany, cheap at the time and easily worked)
cuvette - to hold samples - 12 X 75 mm test tubes work fine; get 'em
from American Science and Surplus
light source - can be light-emitting diodes, an incandescent lamp
extracted from an ordinary flashlight, the entire flashlight (more
convenient)
monochromator - turns white light to a single color (not needed with
color LEDs) - a packet of plastic sheets of different colors can be
bought cheaply from Edmund Scientific.
detector - cadmium sulfide cell or photodiode (either one generally
available from Radio Shack or Jameco)
meter - a cheap volt-ohm-milliammeter
The parts are arranged so light from the source is filtered through
the monochromator, if needed, and passed through the cuvette and into
the detector. The detector translates the light into an electrical
signal, which can be read with the meter. Seal it with black tape so
outside light does not leak in.
To use a digital camera, you'd have to convert the images to black and
white, otherwise you have the same issue with color blindness.
Photograph the sample through a colored filter (important), download
to a freebie photo processing program like ImageForge, and convert to
B&W.
