The Amish speak the brand of German that was popular in the 16th
Century, when they left Germany. Of course, back then, when they said to
the English "Ich bin Deutsch" the silly English though they'd said "Dutch".
And don't mistake the Pennsylvania Dutch for the Pennsylvania Germans.
Completely different bunch of Volk :-) (I'm from the Pennsylvania German
tribe. We kind of considered the Amish as ... odd. As early as 1854, we
thought them odd.

Say what you want, but if in the "United" States each of the several
states spoke and required a different language, there would be a need to be
polyglot. Kind of like Europe.
As it is, one can travel the distance from Lisbon (The city in
Portugal, not the one in New Mexico) to Moscow (the city in Russia, not
Idaho), with out the need to change languages. Makes for great
efficiencies in communication, business and industry.
