Break beam sensor for LED Control?

I am curious if anyone has any idea on how to make a IR sensor or break
beam sensor that when blocked, dims on an LED (and keeps it illuminated
while blocked) and then dims off when not blocked.
Or any other advice to achieve such a goal?
