You're always free to add a note to the diagram, or better to the
schematic symbol so they can't mess it up on the layout.

The 'draughtman' I've regularly used also indicates which end is CW or CCW on
pots and I tell him which end it should be.

Our schematic symbol for pots has a dot in the CW end.
