I think I have an idea what you're saying - you'd use the FETS to short
across a given stage in this string of effects circuits.

I'd use something like CD4053s, like a SPDT switch at the input
and output of each effect stage, one on the input and the other
on the output, with NC of each going to the circuit and both NO's
going to each other.

(The switch "wipers" (actually analog switches) are invisible in this
view.)

Wiring 4053s as SPDT switches, is, of course, left as an exercise for
the reader. ;-)
