Your best bet is to come up with a different plan.
Some people have used a viewfinder from an old tape video recorder
for this sort of project.
You are unlikely to be able to directly feed composite video to an
LCD taken from a camera (and it may be some other sort of display
rarther than liquid crystal). The electrical interface to a camera
display
is different between different types of display.
Your will probably need to retain the display driver intergrated
circuit,
which might turn out to be intergrated into a camera control chip
in a way that you can't practically repurpose.
If you really want to try this I suggest starting by scouring the
web for service manuals and technical information on camera.
Try to find some that list the display driver IC, then look for
the display driver datasheets. Some are likely to be proprietary
so you won't be able to find the information you need to
control the display.
After you have identified a model of camera that you have
enough information on how the display works to make use of it
get a few of them. Disassemble them, probably desoldering
the surface mount display driver IC and figuring out a
way to connect wires to the display.
After you have got the display running seperatly in a test
setup start designing a circuit to convert the output of your
camera into a form you can put into the display.
This will probably involve a video ADC and an FPGA.
The cost of development tools, desoldering equipment,
cameras, PCB's, FPGA's and miscellaneous parts will
vastly exceed the cost of all the other stuff so you
might as well get a good video camera instead of a cheap one.
