It's certainly a mystery to me why anyone entering university would
choose EE.

Because it's fun?

If you get excited for 48K, you need your head examined.
It's too late for oldsters like me, but if I could do it over again,
not a picosecond would go towards EE.

I would. I've done reasonably well and had a lot of fun along the
way. Even more so now that I can do what I want.

I'd look into what's more lucrative and important in today's world.
Medical, law, environmental (could be something like building or
selling green homes), etc.

Medical? You must be joking. You might just as well work on the GM
assembly line.

All the hard work in EE has been done. It's all firmware now.

1) Completely wrong.
2) EE is a good way to get into firmware if that's what floats your
boat.
