Choosing correct phone cable for a new house



My friend is having his house rebuilt. Before the drywall gets put
up, he wants to run phone wires. We are trying to figure out what
kind of cable to buy, but we have received conflicting advice.

One person told us to use Category 5e cable with 8 conductors. He
said you don't use all 8 conductors, you just connect the ones that
you need. Someone else told us this will not work because we will
not be able to connect 8 conductor cable to the inside wall portion
of a typical phone jack faceplate, which will have a 4 pin connector.
Can anyone offer their opinion?...Is 8 conductor cable really better?
Will I be able to connect this to the inside wall side of a typical
phone jack faceplate?

An additional question that came up is...What is the difference
between 'plenum' type cable and 'riser' type cable? Which should we
get?

If anyone could offer some insight or advice, I'd really appreciate
it.
