Does anyone know if there is a controller available which allows a
computer to control the speed of an AC motor (110V single phase)
motor, like the motor in a centrifuge via a USB port, or even a n
RS-232 serial port.

What kind of motor is it?
Whether the motor can be controlled and the controller technology depends on the
type of motor you have. There are a number of types of AC motors, such as
universal motors, induction motors, split phase, etc. They all need a different
technology to control the speed.
