How do you define energy so that energy won't change

You don't. But this was settled over one hundred years ago.

Here is one for your bag of quandaries. A photon leaves a quasar taking x amount of energy. But here on earth we see the photon with < x amount of energy. Does the photon 'have' energy? No, it conveys energy. Energy is a relative quantity. Problem solved.
