If you read a whole thread in order then it doesn't matter. More
usually people pick up messages that are in the middle of a thread and
a small amount of quoted text reminds you what is being discussed and
in particular shows precisely what you are responding to. It is all
about having consideration for the people who will be reading your
message, not being lazy and doing what is easiest for you just to save
yourself a couple of seconds.
