you can do it, but your setup is not ideal. the problem is that your gps receiver has no internal logging (data storage) capability. data can only be stored on the pda in real time. that means you have to have the pda with you on the mtn bike, the pda has to be powered up, and has to have an active bluetooth connection with the pda in order to collect data. assuming you want to go the pda route, there are several bluetooth gps units with logging capability - i use the bluelogger by earthmate. with these units, you only need to take the gps unit with you - it will record the data and then you can download it via bluetooth to your pda or pc when you are done.
alternatively, you can buy a simple stand alone unit - like the garmin geko - which has logging ability.
of course, if you want or need to view the map while you are riding, your setup is okay, but pda's are a little delicate to be mounted on a mtn bike.
i am not familiar with pocket topo, but it seems that your immediate problem is that the program is not recognizing the bluetooth connection. someone who knows the program can respond, but there is probably some menu item in pocket topo that will initiate a bluetooth connection with the gps.

And there is a Pocket Topo version that loads in the iPAQ, and I can copy maps to it from my PC. When I start the program on my PDA, Pocket Topo has an option to "track GPS current position". But I don't see that this is doing anything. It doesn't create way points, and it doesn't create a map.
The GPS unit came with a utility called GPSinfo. And if I start that on the pda, it does show the satellites that it sees and will give me my current position, so I know its working. Other than that, I'm completely lost (no pun intended).
