As far as I know, a bluetooth and one device authenticate at
the beginning of a session for security. The recent occurrences of
lifting data from some celebrities' PDAs and such were implemented by
using a "reconnect" function, normally used to restore a dropped
connection. In these cases, it was used in such a way as to hijack the
connection and cause authentication to be made with a third party's
deice.

In short, BT is intended to establish a connection with a
single device for the duration of the session.

In a way, it's similar to the question which comes up often in
this group concerning why a single serial port (connected to a GPSR)
cannot talk simultaneously to two concurrently running applications.
In that case, there are solutions involving the use of virtual ports.
