A while back I bought a Garmin GPS-V after considerable investigation.
If I were doing it today, I would choose a Garmin GPSMAP 76Cx. The hand
held will serve you well in back country hiking, bicycling, canoing and,
connected to the laptop, will do all you want in the RV. You will want
to download Garmin's nRoute (free) that will provide you with all you
need for RV travel. You will, of course, need maps. I suggest you get
MAPSOURCE NORTH AMERICA CITY NAVIGATOR DVD V8 and if you are going back
country strictly in the U.S., get MAPSOURCE UNITED STATES TOPO. If you
will also be going into Canada, get GARMIN MapSource Canada TOPO CD-ROM.
You will likely be able to hold all the maps you'll need for a few days
in the card that comes with the unit but 1GB cards are pretty cheap
these days.

Also, I highly recommend that you get an external antenna (GARMIN GA
25MCX external antenna) for use in the RV and, perhaps, even in the
Jeep. A metal vehicle roof blocks a lot of the sky view. Shouldn't be a problem in New Mexico but when hiking in the forests of the west coast, I put my mine in a pocket on the inside of the top of my hat. Believe it or not, it makes a big difference in reception. If you don't already have one, you might consider a 12V to 120V inverter so you can run your laptop and charge your batteries in the RV. I use Sanyo 2500mah NiMH AA rechargeables in my GPS and camera.

Are hand held units good?
Very.

Or is it better to get a bigger one that can be mounted but still be
moved?
I didn't and wouldn't. The flexibility of the handheld/laptop
combination is hard to beat.

Don't really want to spend over about $700.00.
You shouldn't need to. By the time you get the unit, maps and other stuff you'll be getting close but not over.
