At the moment I think TomTom is the only one which claims to support
map transfers. Lowrance uses a java app for their firmware updates
which will work on Macs and Linux machines, but I don't know if that
extends to maps.
Garmin is gradually getting Mac support in their software, but not
with maps yet.
Most vehicle nav units come with the maps preinstalled, you could hope
that Garmin gets MapSource up and running on the Mac before you need
to update your maps.
On the handheld side you may be able to get maps preloaded on a SD or
microSD card. Garmin seems to have the best selection in that
category.
Other than the map loading issue MacGPS Pro does a great job with
waypoint/track things and does let you use maps of your choice on the
Mac.
