I had a III+ (same form factor as your V) and now have a 76CS. I think you will be interested in either the 60CSx, 76CSx, 60Cx or the 76Cx. The "S" includes the barometric altimeter (much more accurate altitude than the units without). The only real difference in the 60 & 76 is the form factor (try them both and pick the one that feels best. The 60 series may get slightly better reception than the 76 series due to the antenna placement, but I can't verify this - I've always used an external (Gilsson - $20) antenna with my 76CS.
Regardless, you'll be amazed at the option to use the microSD card. It is far better than the older versions with built in memory. Finally, I don't think you'll miss the horizontal/vertical options for the screen. I thought I would too, but it really makes very little difference.

And, seeing as how it's getting past its prime, I was thinking of
looking at new receivers. Are there any on the market that walk the
line between car GPS and hiking GPS? When I glanced at the Garmin
site it seemed like they don't make units like that anymore.
Basically, what I'd like is a more modern version of the V. More
memory, better screen, but similar form factor and customization.
