For 言う, it's not really "can be." That's just the way to say it.
As to 言った, ゆった is a rare pronunciation in my experience, which I
have always recognized as an unintended grammaticalization of the actual
pronunciation of 言う.
Those things happen. I've heard people slip and say きない for 来ない.

Yes. It's a cousin to 書いている coming out かいてる. All verbs go
that way, assuming the ている form is possible for them in the first place.

"Leisurely" is only used as an adjective in English. To make it into an
adverb (I don't recommend trying this at home), you'd have to change the
"y" to "ily" or something. "He was walking along leisurelily." People
might say that by mistake, but hmmm.... nine Google hits.
