The second surely expresses that it is too late to caugh
up the object back (and that it's probably a shame that
i have eaten it). What i'm unsure of is whether the first
sentence also is to be interpreted as something already
has been eaten or something that will be eaten soon or
is being eaten right now.

The first one might also mean, one will eat up all of it from now while
the second statement might describe a finished action
Plus, しまう's meanings are plenty up to the context in which it is
used, if you suddenly turn out to be jealous of what someone owns,
〜〜しまいました I guess would also be best fitted for the
case.
By the way, this reminds me of the 寿司 problem someone used to make
up as to whether or not eating 寿司の生魚 will be accidentally
poisoned. The answer is YES, there have been some cases in Japan I have
heard that some 寿司店 have had to *take a long rest* then on. I
hope the answer won't actually let those store owners down, at least
some seconds anyway, just in case they by chance find out this post of
mine.
Also, reading something about *eating up some books* reminds me of the
day I eat some love letters from my girlfriend thinking that she had
some serious trouble with her ex-boyfriend but it finally turned that
she wanted to practice English.
