せっかくですが、

I know it means 'I'm sorry but...' but so does 'すみませんが、' and 'ごめんなさい'.
What does せっかくですが convey that the others don't?

It conveys "thank you for asking but (I'm going to refuse)".

どうしても〜ようにしない as in:
母親が買ってきた赤いシャツをどうしても着ようとしなかった。

I know どうしても means 'know matter what/how' but how is 'よう' and the
negative adding to the meaning?

"no matter what we said he wouldn't try it on"

"wouldn't even try it on in spite of our persuasion"



~ように思う as in:
A: この音楽、ごぞんじでしょう。
B: ええ、どこかで聞いたように思ったんですが。

What does it convey? How would it differ from どこかで聞いたと思ったんですが


I don't really know, added vagueness perhaps?

B wants A to know that he thinks he's heard it.
