Normally, it is done
1）豆腐は布巾（ふきん）にくるんで、軽く重しをして、
水切りをし・・
"軽く重しを"するには、豆腐を布巾（あるいは、キッチン・
ペーパー）でくるみ、これをまな板などの上に置き、
その上に比較的軽めの重し、例えば少し水を入れた
調理用パッドなどを置きます。
ある程度の時間そのまま置いておくば、豆腐に含まれる
水が、布巾（またはキッチン・ペーパー）に吸われます。
なお、豆腐の水切りをする方法は他にもあり、それを
知るには、"豆腐"＋"水切り"で検索するといいでしょう。
