I pronounce the vowel in my last name like a German ei or the long i in
knife. However, Dutch people say its not correct. When I try to pronounce
it the way they say, they tell me it's closer but just a little off. Their
pronunciation is closer to the long 'a' in safe but it is a strange
diphthong that doesn't correspond to any English vowel.

That's very close to what it is. It's is like the long 'a' maybe with a
touch of 'y', pronounced slightly further back in the throat.Not being a
trained linguist that's the best I can explain.

I've had help from trained linguists but there's only so much you can pick
up without constant exposure. I don't know if it was just my perception
but it appeared that the advice I received from Dutch linguists pronouncing
Dutch diphthongs was similar to the advice I received from Korean linguists
pronouncing Korean diphthongs.
