Because it was a stereotyped phrase -- the guy must've said it a dozen

I don't think the phrase "Maltese falcon" occurs even once in the
movie, yet I've never heard anyone name the movie with anything but [O
- O], and they never say "falcon" with anything but [&].
Just for the record, Greenstreet uses "Maltese falcon" in Gutman's
speech as he sells out Wilmer (Elisha Cook, Jr.) to satisfy Spade's
demand for a fall guy. That is the only use of the phrase.
"If a man loses a son, he can get another, but there is only one Maltese
falcon."
