I don't know what spanish choirs do, but I've heard galician choirs use something similar to church usage. In fact I suppose any choir will use either the local church's latin, which I think is mostly the italian version with small changes, or a 'classical' pronunciation. Simply reading the latin letters with the local language's values would, I think, be considered very pedestrian in whatever country. Certainly not fit for a choir.
