"Rahm" is used for "Sauerrahm" (sour cream) in Viennese cooking. Compare "Rahmschnitzel", "Rahmnockerl".
This is the old Germanic word for sour cream. Sw. dial. <römme>, Norw. <rømme>/<rjome>, Icel. <rjómi>. Hellquist (<http://runeberg.org/svetym/index.htm>) also lists AgS <réam>, MLG <róm>/<rám>, MHG <roum>. Acc. to Hellquist, with reference to Schwyzer, it may be related to Av. <raoɣna> "butter". Superficially it looks as a derivation from the same root as e.g. No. <røyk>, Germ. <Rauch> "smoke", suggesting an original sense "float". I hope somebody will know more about that. I'm far beyond capacity.
